Today's the Big Race!

Today’s the big day! The 4 mile trail race is at 2PM. I am definitely nervous about this one. I have never done a trail race and never done more than 3.1 miles (5K) at a time. It is going to be a muddy mess out there from yesterday’s rain. My goal: slow and steady to the finish line. I am quite certain I will be last and I am okay with that. Decided to try something new this morning for breakfast. Where did I get the idea? Pinterest of course. This is what I was going for:

Instead of ham, I used canadian bacon. I was also only making 2, not 12.

They turned out okay. The recipe said to cook for 12 minutes and I think I wound up cooking them for 14. The eggs just didn’t seem cooked. Don’t get me wrong – I love over easy, runny easy, but the white part didn’t seem done. Any ideas what went wrong?

Off to pay some bills and go through this week’s mail.

  1. Have a great race, I admire you for doing something like that. I am not much of a cook but anytime something does not seem done, I would have cooked it a bit longer myself.

  2. Hi! I just saw your post on my egg recipe- thanks for making it! I hope your race went well! I think that because canadian bacon is so much thicker than the thin sliced ham I used- the cook time will be longer! If I had to guess, I think that’s the issue. Also, the whites do look a bit cloudy, even when the egg is done. I cook mine for 12 minutes and then leave them in the pan as I salt and pepper them. That gives them a little more time to set without fully cooking the yolk.

      Thanks Lindsay! I didn’t think about the canadian bacon being the issue – and I had to use 2 pieces in each cup. Next time I will cook longer and try only 1 slice of canadian bacon. Great recipe!
